Making the dark chocolate ice cream without an ice cream maker

You can make your yummy chocolate ice cream with an ice cream maker or you can do it the old style, proven way and make it by hand. It is not as hard as you might think. All you need to do is stir the ice cream regularly during the freezing process.

  1. Place the ice cream mixture into a freezer-safe container and put it in the freezer.
  2. Every 30 minutes, stir the mixture, until it is fully frozen. That will be after about 4 hours.

Before serving, take the dark chocolate ice cream out of the freezer and let it rest for 15 minutes. By then it has the perfect consistency.

Ingredients 

  • 500 ml milk full cream
  • 165 ml whipping cream
  • 40 g dark chocolate min. 65% cacao
  • 160 g caster sugar (powdered sugar)
  • 50 g cocoa powder (unsweetened)
  • 1 egg white
  • 1 pinch black pepper
  • 1 pinch cinnamon
  • 1 pinch salt

Instructions 

  • Put the milk, cream, dark chocolate, pepper and cinnamon in a saucepan and heat gently to boiling point. Stir until the chocolate has melted, then leave to one side to cool down.
  • In a large bowl, now combine well the sugar, egg white and the cocoa powder.
  • Now add the milk mixture carefully and whisk together until well combined and thick. You want to have a shiny, thick mixture.

In ice cream maker:

  • Pour the chocolate ice cream mixture into an ice cream maker and churn until ready.

Without ice cream maker:

  • Place the ice cream mixture into a freezer-safe container and put it in the freezer.
